Chocolate No-Bake Cookies

This has always been my absolute favorite cookie. My mom has been making these ever since I can remember. Not much lately but that's because when you make them, you tend to eat them. When I make them, they speak to me as I walk by. I can hear the little bastards whispering, "eat me, eat me". I can't help it, I must oblige. They are THAT good. I believe this is the most sinful recipe on my site. Just looking at this recipe makes me want to go make these cookies. I can hear them calling already "eat me eat me...."

Don't rush the dulling stage. You will be sorry. If you don't do this recipe right, the cookies won't set up properly. If that happens, all is not lost. You can always make them refrigerated no-bake cookies but if you do it correctly, they will be counter friendly no bake cookies and they will have the perfect texture. Be forewarned, don't make this recipe unless you have 4 people or more to share these cookies. Otherwise, plan on giving half the batch to your neighbors. They are much too addictive and irresistable to keep around for long.

  1. Combine sugar, cocoa, milk and butter in a saucepan and bring to a boil. Boil for 3 minutes.

  2. Remove from heat and add in the peanut butter and quick oats.

  3. Stir the mixture until it thickens and starts to look dull. This stage is a real arm buster but don't rush it! DON'T RUSH IT!! I'm not screwing around here.

  4. Now that you have a dull looking mixture. (You didn't rush it did you?) Drop spoonfuls quickly onto waxed paper. Let them cool until firm. If you rushed the dulling stage, they will never become firm without putting them in the refrigerator.
