• 1/3 c olive oil
  • 8 oz dried angel hair pasta
  • 3 canned chipotle peppers
  • 6-8 roma tomatoes
  • 6 peeled cloves of garlic
  • 1 onion
  • 1/2 c water
  • 1 tsp sea salt
  • 6 c vegetable broth
  • lime juice
Fideo Soup

This small-batch soup is by far my favorite. It's so incredibly quick and easy to make this soup that it would be a crime to eat anything out of a can after trying this. It has a slighty smokey chipotle flavor mixed with tomatoes and the hint of spice.

Do not omit the lime juice. Even if you don't like lime, it doesn't come through tasting like lime. It is the secret ingredient of this soup that takes it from great to exquisite! This soup is best if you let it sit on the stove with no heat for 20-30 minutes after it's finished. It's even better reheated.

  1. Heat the olive oil on medium-low heat in a stockpot that can handle all of the ingredients. Careful not to smoke the olive oil.

  2. Break the angel hair pasta into 1-2 inch pieces into the pot and saute until some of the pieces turn brown. Don't take your eye off of it for too long because it will burn if you don't keep stirring it.

  3. Add the chipotle peppers and keep stirring it around for another 2 minutes or so.

  4. In a blender, combine the tomatoes, onion, garlic, water and salt. Puree until smooth.

  5. Add the vegetable broth and puree to the pot. Bring to a boil and reduce to a simmer for 15 minutes or so. Remove chipotle peppers.

  6. When serving, stir a good splash of lime juice into the bowl of soup.
