  • 2 - 14 oz cans of coconut milk
  • 2 c water
  • 1 c sugar
  • 1 c cornstarch
Hawaiian Haupia Surprise

This is an interesting desert that recipe that I came across and then modified to my own needs. I've never had real Haupia so please excuse me if I'm totally screwing this one up. Whatever the case, this is a really tasty dessert by it's own right.

Traditional Haupia is a thick coconut pudding where you make the coconut milk from scratch from fresh coconuts. We are going to fake it though.

how much conrstarch!?!? Yep, there really IS a whole cup of cornstarch in this recipe. It sounds nuts but it works out fine. You'll see.

  1. Combine flour, 3 tbsp sugar, chopped pistachios in a bowl and stir it up.

  2. Throw in the butter cube and start cutting it in like you would for biscuits or a pie crust.

  3. After the butter is totally cut in. Press the mixture into a 2 liter glass lasagna dish and bake at 350 degrees F for 20 minutes or until it's browned a bit.

  4. While the crust is cooling, mix the coconut milk, water, one cup sugar and cornstarch in a soup pot.

  5. Crank up the heat and keep stirring the mixture until it is smooth as possible with no lumps and until it starts to thicken.

  6. Once it starts thickening, you have a little time to pour it over the crust. Put it into the fridge to chill after that.

  7. After it's chilled, serve with fresh whipped cream and toasted coconut on top.
