Mozzarella, Pesto and Sundried Tomato Appetizer

This is one of the easiest and most satisfying appetizers ever. Always a hit at parties and you can make it as you are walking out the door practically. Make absolutely certain that you are buying the fresh, unsalted mozarella that is submerged in liquid. This is an entirely different cheese from the grated mozzarella that generally tops a pizza.

If you have leftovers of this dish, it makes a great snack the next day or you can throw it on your pasta for a quick and tasty lunch idea.

  2. Cut the sundried tomatoes into strips.

  3. Mix all of the ingredients together and serve with small slices of fresh bread. Toast the bread with olive oil if you like.
